GF Panera-Like Broccoli Cheddar Soup

Prior to my Celiac diagnosis, I spent many a nights in college eating Panera broccoli cheddar soup out of a sour dough bread bowl. Might how things have changed. While I’ve ditched the bread bowl, I can’t break the soup habit. Unfortunately, Panera’s soup isn’t gluten free, but my recipe (a compilation of many variations from the Internet) is. What I love the most about this soup is the combination of the broccoli and carrots. It’s guaranteed to satisfy your soup cravings and makes enough to freeze a serving or two. Don’t forget to serve it with a crust GF baguette!

GF Panera-Like Broccoli Cheddar Soup

This freezes well too! If you like your veggies extra tender, you can microwave the broccoli and carrots for about two minutes prior to adding to saucepan.
Ingredients
  • 4 tablespoons butter
  • 4 tablespoons gluten free flour (Jules' is the best)
  • 3 cups skim milk
  • 2 cups gluten free chicken broth (I like Swanson's Natural Goodness)
  • ½ of one small white onion, diced
  • 2 cups chopped broccoli
  • 3 carrots, diced
  • ¼ teaspoon salt
  • 1 teaspoon garlic powder
  • ¼ teaspoon pepper
  • ¼ teaspoon paprika
  • 2 cups shredded cheddar cheese
Instructions
  1. Melt butter in a saucepan over medium heat. Whisk in flour and cook for 3 minutes until bubbly
  2. Slowly add milk and broth and continue to whisk on medium for 5-6 minutes
  3. Add broccoli, onion, carrots, onions, salt, pepper and spices and cook for 10 minutes on medium
  4. Add cheese and cook on low for 10 minutes

I’ve updated the recipe with instructions on when to add the broth and also added a tip about pre-cooking veggies if you like them tender. I prefer a bit of crunch but it would be good softer too.   4. We love this gluten free soup. This is the second time I have made this and I usually double the recipe for our family of 5. It is yummy. I actually use 4 cups of 2% milk & 2 cups of half & half. I also grate my own cheese- I use Cracker Barrel Aged Reserve. Yum!
